we love carrots in vinegar at my house. however, the store bought one's can get expensive ($1.29 or so for a tiny can) we eat more than a tiny can in one sitting. so yup, expensive. they also do not taste as good as homemade...so I.started making them at home and their a hit. hubby and I love them, my mother in law loved them as well. :) I'll post ingredients and then share what I do..
ingredients:
carrots (I use a lot, 4lbs or so)
vinegar
can of jalapenos in vinegar (optional)
salt
oregano
(water to boil carrots)
procedure:
I peel carrots, then wash them and chop.them up to my liking size, shape, etc..
then I boil them in water (almost until completely tender, soft enough, but still a little crunch) I take them out of.the heat and immediately put cold water over them, to cut the heat.
then I drain them and add them to the container where I will be storing them in the fridge.
In here sometimes I add a small jalapenos can but sometimes I skip.that step. (it's optional) after I add enough vinegar to cover carrots, then I add a little salt to taste and dried oregano. :)
that's it!! I stir and enjoy right away, or store I fridge until I am ready to use them. *they taste amazing IMO and last long in the fridge. they are also low in cals, no fat, and give your food flavor. :D
